Our salt is solar evaporated and hand harvested in unheated hoop houses making the process completely driven by the sun.
Because our salt comes out of the evaporation houses very coarse, we have to grind it. We are aiming for a consistency similar to fleur de sel, as this is our favorite crystal size for finishing salt. Irregular crystal size, lots of minerality and a slight moisture content make it ideal as a “ finishing salt”, i.e. one that you grace your food with on the plate, right before eating, but it can of course be used for anything you use salt for.
