After years of experimenting with fermentation in their home kitchen, Kristin and Colin Franger started Blue Bus Cultured Food in May 2014, named in honor of their former fun-mobile, a 1973 blue VW bus. Operating from a small farm in White Salmon, WA they make 5 different types of sauerkraut using locally sourced organic ingredients that are never fermented in plastic. To the uninitiated, sauerkraut is chocked full of healthy cabbage which has cancer-fighting properties and good bacteria that help the digestive tract. Choose from the ‘classic’ sauerkraut or try their best-seller and 2016 Good Food Award winner, kraut-chi, described as sauerkraut meets Korean Kimchi.
